DON JULIO Reposado VAP Highball Glass
The agave used for Don Julio Tequila is cultivated on the family estate in the highland region of Atotonilco. The production of tequila begins long before distillation, as agave plants require seven years to reach full maturity. Each plant is meticulously hand-harvested, with the spearlike leaves trimmed away, leaving behind the heart, known as the piña. These piñas serve as the raw material for tequila production.
At Don Julio’s distillery, the piñas are carefully cut into evenly sized pieces to ensure uniform baking. They are then slowly baked in brick ovens over several days. Once baked, the piñas are crushed, and water is added to extract the sweet agave juice. Yeast is introduced to the juice, initiating fermentation, which transforms it into a slightly alcoholic agave beer. This beer is distilled in stills, producing tequila.
The final tequila is either stored in stainless steel tanks for bottling or aged in ex-bourbon casks for added complexity. This meticulous process highlights Don Julio’s dedication to crafting exceptional tequila.
