    TASTING NOTES:
    • Aroma: On the nose, this ambitious red could present a lush and sophisticated tapestry of aromas. The high-altitude terroir imparts a fragrant melody of ripe black fruits, possibly including blackcurrant and dark cherries, harmoniously intertwining with subtle hints of violets and an earthy minerality. Gentle whispers of well-integrated oak might offer undertones of vanilla and spicy notes of black pepper, creating a nose that is both inviting and complex.
    • Palate: On the palate, the Ao Yun 2018 potentially offers a rich and multi-layered experience. Its mountainous origin might grant it a remarkable freshness, with a vibrant acidity that lifts the deep flavors of dark fruits. Notes of plum and dark chocolate might dance gracefully on the palate, accompanied by a delicate hint of tobacco and a rich expression of the terroir’s minerality. The structure is likely to be firm yet elegant, with finely-knit tannins providing a backbone to the wine, supporting a cornucopia of flavors in a harmonious balance.
    • Finish: The finish might be long, lingering, and evolving, a signature of a wine crafted with attention to detail. The end note potentially leaves a rich tapestry of flavors that slowly unfold, offering a sustained finale with a resurgence of fruity and spicy notes, leaving a lasting impression of warmth and complexity, inviting reflection and a deeper exploration with each sip. It might hint at a potential for aging, promising to develop even greater depth and nuance over time in the cellar.

    Description

    AO YUN LVMH 2018

The 2018 vintage, overseen by the luxury house of LVMH, continues Ao Yun’s tradition of pioneering excellence in Chinese viticulture.

    Vineyard

Sourced from vineyards perched at altitudes ranging from 2,200 to 2,600 meters above sea level, the Cabernet Sauvignon and Cabernet Franc grapes benefit from a diurnal temperature variation, encouraging a slow and even ripening process. This high-altitude viticulture results in a wine of remarkable concentration and complexity, a true testament to the incredible potential of China’s wine country.

    Vinification

Hand-harvested with meticulous care, the grapes undergo a traditional vinification process, coupled with modern technology, to preserve the purity and expressiveness of the fruit. Matured in French oak barrels, the wine develops a refined structure, with a perfect balance of power and elegance.

    Serving Suggestions

Serve at a temperature of 16-18°C to fully appreciate its vibrant character. The Ao Yun 2018 pairs exceptionally well with rich meat dishes, such as braised lamb shank or a fine steak, elevating any dining experience to an exquisite level.
