CHATEAU ROUMIEU Haut Placey AOC Sauternes. Roumieu is the name of a plot of the property as well as the name that the Moors gave to the Christian pilgrims who traveled the road to Santiago de Compostela. The cold waters of the Ciron, combined with the warmer ones of the Garonne, produce morning mists that create an ideal microclimate for the development of noble rot (Botrytis cinerea), which gives Sauternes a unique character.
The grapes are harvested manually, with careful selection of the bunches and the grapes themselves. Classical fermentation follows, with scrupulous temperature control in order to obtain a harmonious and perfect balance.
