The Paring Red 2017
The 2017 iteration is a Bordeaux-style blend of 50% Cabernet Sauvignon, 20% Cabernet Franc, 20% Merlot and 10% Petit Verdot. It’s a malleable red—full without being too heavy, light without being one note—and it’s a bit more full-bodied than I remember, with texture and layers that linger on the palate. The flavors are fresh and bright, with notes of baking spices, chocolate, and tobacco that provide a perfect foil to juicy strawberry and black currant.
