YACHIYO Jummai Daiginjo. Yachiyo Sake Brewing Company is located in the Mutsumi area deep in the mountains of Hagi City, Yamaguchi Prefecture, the birthplace of the Meiji Restoration, which produced Shoin Yoshida, Shinsaku Takasugi, and Hirobumi Ito. It is a small family-run sake brewery that has been in business for generations since 1887, producing only 150 koku of sake per year. While most sake breweries use soft water for brewing, we use medium-hard subterranean water from Mt. Yamada-Nishiki rice grown in-house is used for sake rice, and the brewery has been loved by the locals for 133 years without changing its traditional brewing methods. The local people have long eaten wild boar, wild vegetables, and other foods with a strong aroma and flavor. Yachiyo Junmai Daiginjo, a representative product of the Yachiyo Sake Brewery, is sweet and rich,with a strong flavor that is typical of traditional Japanese sake and goes well with foods with a strong aroma.
