The Dassai daiginjo sake has a particular “WOW” factor that is a revelation to many. Produced by the legendary sake brewery, Asahi Shuzo, the Dassai 23 sake is unimaginably smooth, complex, inviting yet approachable.

Also described as drinking liquid jewels, the Dassai 23 junmai daiginjo is a well-balanced sake that has an intense aroma, a mellow taste and just the right amount of acidity to tie it all together in a long and lingering finish.

The number following the brand name, in this case, the number 23, is the seimaibuai, or rice polishing ratio. This means that the Dassai 23 sake has been milled down to only 23%! This is what makes the sake incredibly smooth!

What most people don’t know is that initially, Asahi Shuzo planned to produce a Junmai Daiginjo sake with a rice polishing ratio of 25%. However, Asahi Shuzo found out that another producer was already selling a Junmai Daiginjo sake that has been polished down to 24%. Wanting to make Japan’s most polished sake, the producer went down to 23%. A total of 168 hours is required to polish the rice to produce the sake known as Dassai 23 Junmai Daiginjo.

Truly delicious and enjoyable for all, the Asahi Shuzo Dassai 23 is the ultimate sake meant for tasting. A class of its own, on the nose, aromas of grapes, flowers and strawberries fill the air. It is clean yet full of Daiginjo flavours that comes with a deep and layered structure. Look out for tastes of brown sugar, plums and minerals.

Very smooth and light, the Dassai 23 has been hailed as the best sake in the world. Once, a variety even featured this drink. Participants had to guess which was the real Dassai 23 from a taste test and one of the participants guessed it right saying, “This one is different from all of the sake I’ve ever tried. It tastes good, not like the bad experiences I had until now, so this must be the real Dassai.”

Another participant said “At first I could not get it but by slowly drinking it I could see how tasty it was”. This showed how complex, yet tasty the sake Junmai Daiginjo is.

A fantastic Junmai Daiginjo

This is the best of the Dassai and also one of the best sake’s around. The fragrance is delicate and the flavors are like a bouquet. Highly recommended if you are in the mood to splurge!

You can really tell the difference if you’re always drinking just the Dassai 45, and then treated yourself to this. No wonder Abe gave it to Obama.
