Some distilleries do not use colouring at all whereas others do use it. Legally, for single malts, a small amount of caramel colouring can be used so that the malts have a consistent colour. For those who do not, the golden caramel colour comes from the peat.
Usually, single malt scotch whisky is enjoyed on its own or if preferences have it, on the rocks. However, some cocktails do use single malt scotch such as the Whisky Smash and Rob Roy (Scotch Manhattan).
